Back to school: Mega muffin recipe

It's back to school time again! Here is a basic muffin recipe that yields large muffins for the kids. I provide ideas for add ins to customize the basic muffin recipe to each family.

In addition to back to school, these muffins are perfect for weekends and Holidays, breakfasts, brunches and snacks. Basically, they are good for anyone at any time.

Basic Muffin Recipe (Mega Muffins)

Muffins:
  • 1 stick of margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tsp. vanilla
  • ½ cup milk
  • 2 ½ cups flour
  • 2 tbsp. baking powder
  • 2 cups of your additives
Streusel Topping:
  • 3 tbsp. margarine, softened
  • 1/3 cup brown sugar
  • ½ cup flour 
Preheat oven to 400*.
Prepare a muffin tin with muffin liners.
Cream butter and sugar together.
Add eggs, vanilla, milk and additives.
When combined add in flour and powder.
Fill up muffin pans to ¾ full.
Mix all streusel ingredients until crumbly.
Sprinkle over each muffin and bake.
Bake for 20-25 minutes.
Makes 6 to 8 large muffins.

Fruits: bananas, blueberries, apples
Apples and cinnamon

Peanut butter
Jelly
Nuts
Chocolate chips or chunks
Butterscotch chips
Cinnamon chips
Caramel chips
White chocolate chips
Candy bars, crumbled
Andes mint candies, crushed
Pumpkin
Cookies, crumbled

Spices: cinnamon, pumpkin pie spice, cloves

You can add one or more of these additives to your muffin mix.

Tip: Add 2 cups worth of additives.

Try this: Peanut butter, banana and chocolate chips muffins!
