Back to school: My favorite easy snack recipes...


School time! Schedules change, alarm clocks ring earlier and the kids can be grumpy. I have a solution for the grumpiness. Cookies, granola and fudge! Check out these easy recipes to whip up a smile on your back to schooler...

No-Bake Fudge recipe
  • 1, 12 oz. package of semi-sweet chocolate chips
  • 1 can sweetened condensed milk
  • 1 Tablespoon vanilla extract
Line 8x8 baking dish with no-stick foil.
Combine chips, milk and vanilla in a microwave safe bowl.
Microwave on high for 1 minute and stir.
Continue to microwave in 30 second increments and stirring until melted.
Pour into prepared pan.
Allow to cool in refrigerator.
Cut into 1 inch cubes.

**Chocolate chips hold their shape until the are stirred. Be sure to stir often.

TIP: Add chopped candy bars, nuts, or other additive after chocolate is melted to personalize your fudge.

Easy Nut Ball Cookie recipe
  • 1 pound butter, softened
  • 1/2 cup sugar
  • 2 tsp. vanilla extract
  • 4 cups flour
  • 1 cup chopped walnuts
Preheat oven to 375*.
Line cookie sheet with no-stick foil.
Cream together butter, sugar and vanilla.
Add flour and nuts.
Spoon onto prepared cookie sheet about 1-2 inches apart.
Bake for 12-15 minutes.

Honey Granola Recipe
  • 6 cups rolled oats
  • 3/4 cup flaked coconut
  • 3/4 cup slivered almonds
  • 1 cup honey
  • 1/3 cup oil
  • 1/2 tsp. vanilla
  • 1 cup raisins (optional)
Preheat oven to 350*.
Line a cookie sheet with no-stick foil.
In a large bowl, combine oats, coconut and nuts. Mix.
In another bowl combine honey, oil and vanilla.
Pour over oat mixture and stir until coated.
Spread over prepared cookie sheet.
Bake for 25 minutes, stirring often.
Let cool and break into pieces.
Stir in raisins.
Store in an air-tight container.
