Guess what? There is more than one way to eat a sweet potato! Yup, true story. Sweet potato casserole is one of the most popular ways that Americans eat these vitamin rich morsels. At our home, we often grill them with onions in little foil packets. Even in the fall and wintertime, we grill! Check out this cool recipe that uses sweet potatoes....you may not have thought to use them in a cookie, but it is definitely tasty.
Sweet Potato Chocolate Chip
Cookies
- 1 cup butter
- 1/4 cup sugar
- 1 cup brown sugar
- 2 tsp vanilla
- 2 eggs
- 1 pack of instant pudding, vanilla
- 1 cup mashed sweet potatoes (cooked)
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 cup milk chocolate chips
Pre-heat oven to 375*.
Cream together butter, sugar, vanilla, sweet potatoes and pudding.
Beat in your eggs and then add your dry ingredients (batter will be stiff).
Drop by spoonfuls onto greased or no-stick foil lined cookie sheet.
Bake for 8-10 minutes.

Tip: You can either cook and mash your sweet potatoes for this recipe or purchase canned sweet potatoes and then mash them.
