We like to eat these as a side dis, but you can easily serve them as an appetizer as well.
Spinach and Feta Puffs
4 ounces of cream cheese, softened
1 egg, large
1 Tbsp olive oil or avocado oil
2 cups fresh spinach, chopped
1 cup feta cheese crumbles
Salt and pepper, to taste
1 sheet puff pastry, thawed
1 Tbsp salted butter, melted
Preheat oven to 400 degrees.
Spray 9 cups of a muffin pan with cooking spray and set aside.
Place cream cheese in a glass, microwave safe bowl and set for 10 secods, just enough time to soften the cheese.
Add egg and oil to cheese and mix well, until combined.
In a seperate bowl add spinach and feta.
Add cream cheese mixture, salt, and pepper to the spinach and feta.
Mix with fork until combined.
Cut dough into 9 squares. Add them to muffin tin...stretching to fit.
Evenly divide mixture into each cup.
Bring all 4 points of the dough together to cover the filling, and squeeze them together.
Brush each puff with melted butter.
Bake for 20 minutes or until each puff is a golden color and cooked through.
Cool and remove to eat.
