I made these cookies for my son's Birthday party. They were a hit! I made the dough in the morning and actually baked the cookies in the afternoon. It was great splitting up the preparation and the actual baking.
Butter cookie sticks
- 1 cup butter, salted (2 sticks)
- 1 cup sugar
- 1 tsp vanilla
- 2 cups flour
- ½ tsp baking powder
- 2 tablespoons of half and half or milk
Cream butter, sugar and vanilla using the paddle attachment
on your mixer.
Add flour and baking powder.
Add half and half.
Combine into a ball and place in glass bowl. Cover with
plastic wrap: first cover dough with sheet and then cover the top of the bowl
with a sheet.
Refrigerate for at least an hour.
Pre heat oven to 350*.
Line cookie sheets with no stick foil.
Take half of the dough and roll it out with a rolling pin
about ¼ inch thick, between 2 sheets of wax paper.
Slice into sticks about 1 inches across and 2.5 inches long.
Place on lined cookie sheet and bake for 12 to 14 minutes.
Cookies do spread so you will cut each one into 2 pieces,
length wise.
(I used a little cookie spatula)
When first batch is done, do second batch the same way.
Allow cookie sticks to cool completely.
(You can pop them in the fridge to cool even faster)
How to dip cookie sticks in chocolate:
- Chocolate melting disks
- Colored sprinkles (Jimmies)
Melt chocolate disks in a double broiler on the stove top.
To make a double broiler, add water into a pot and place a
glass bowl over the top, making sure the bowl does not touch the water in the
pot. You want to steam to melt the chocolate, not direct heat.
While chocolate is melting, line a cookie sheet with wax
paper.
Spread melted chocolate over one end of the cookie stick.
Place onto lined cookie sheet.
After about 10 cookies have chocolate applied, add sprinkles
to each cookie.
Complete until all cookies are finished.
These cookies do freeze well.
