Homemade chocolate honey cake...no sugar here!




Try this cake that is sweetened with honey! If you or someone you know can not or is not eating sugar, this cake is perfect.

Honey Chocolate Cake

  • 2/3 cup butter
    1 cup honey
    2 eggs
    2 cups flour, sifted
    1/2 cup cocoa powder
    1 tsp. salt
    1/2 tsp. baking soda
    2 tsp. baking power
    ¾ cup buttermilk
    1 tsp vanilla extract (or almond)

Cream butter and beat honey slowly together. Beat eggs in one at a time. In separate bowl mix flour, cocoa, salt, and baking soda and baking powder--sift three times. Mix buttermilk and vanilla in a separate bowl. Add dry ingredients to butter and honey mixture alternating with buttermilk mixture--mix together. Pour into 2 greased and floured 9inch pans.
Bake at 350* for 20-25 minutes.

Tip: No buttermilk? Add 2 tablespoons of lemon juice (to the 3/4 cup that this recipe calls for) regular milk. Stir and use as buttermilk.

OPTIONAL
 
Frost cake with any type of frosting you desire or...

Frosting

  • 8oz cream cheese
    1/3 cup honey
    1 tsp vanilla extract (almond or raspberry)

Cream until smooth; spread on cake.
