Try this cake that is sweetened with honey! If you or someone you know can not or is not eating sugar, this cake is perfect.
Honey Chocolate Cake
- 2/3 cup butter
1 cup honey
2 eggs
2 cups flour, sifted
1/2 cup cocoa powder
1 tsp. salt
1/2 tsp. baking soda
2 tsp. baking power
¾ cup buttermilk
1 tsp vanilla extract (or almond)
Cream butter and beat honey slowly together. Beat eggs in
one at a time. In separate bowl mix flour, cocoa, salt, and baking soda and
baking powder--sift three times. Mix buttermilk and vanilla in a separate bowl.
Add dry ingredients to butter and honey mixture alternating with buttermilk
mixture--mix together. Pour into 2 greased and floured 9inch pans.
Bake at 350* for 20-25 minutes.

Tip: No buttermilk? Add 2 tablespoons of lemon juice (to the 3/4 cup that this recipe calls for) regular milk. Stir and use as buttermilk.

Frosting
- 8oz cream cheese
1/3 cup honey
1 tsp vanilla extract (almond or raspberry)
Cream until smooth; spread on cake.
