Iced Bisquick cookies

This recipe came to me by a friend. You can get very creative with this recipe. The original recipe is for lemon cookies. I have made them chocolate and tasted them in vanilla. All you have to do is change the flavor of the pudding you add and the flavor of the icing. Have fun with this one!

Bisquick Cookies
  • 1 cup Bisquick
  • ¼ cup oil
  • 1 egg
  • 1 package lemon instant pudding
  • White sugar
Pre-heat oven to 350*.
Line cookie sheets with no-stick foil.
Mix all ingredients into a large bowl.
Roll into ¾ inch balls.
Place onto cookie sheets.
Sprinkle cookies with white sugar and flatten with a glass.
Bake for 8-9 minutes.

Icing
  • 1 ½ cups powdered sugar
  • 2 tbsp. lemon juice
  • 2 tabs of butter, melted
  • Food coloring, optional
Add sugar to a bowl.
Add lemon juice and butter. Stir.
Add food coloring.
If it is too thick you can add more juice, too thin add more sugar.

A variation of flavors:
  • Vanilla cookies: Vanilla pudding and vanilla flavoring to icing.
  • Chocolate cookies: Chocolate pudding and cocoa powder to icing.
  • Coconut cookies: Coconut custard pudding and coconut flavoring to icing.
  • Orange cookies: Orange Jell-O to cookies and orange juice to icing.
