Bisquick Cookies
- 1 cup Bisquick
- ¼ cup oil
- 1 egg
- 1 package lemon instant pudding
- White sugar
Line cookie sheets with no-stick foil.
Mix all ingredients into a large bowl.
Roll into ¾ inch balls.
Place onto cookie sheets.
Sprinkle cookies with white sugar and flatten with a glass.
Bake for 8-9 minutes.
Icing
- 1 ½ cups powdered sugar
- 2 tbsp. lemon juice
- 2 tabs of butter, melted
- Food coloring, optional
Add lemon juice and butter. Stir.
Add food coloring.
If it is too thick you can add more juice, too thin add more sugar.
A variation of flavors:
- Vanilla cookies: Vanilla pudding and vanilla flavoring to icing.
- Chocolate cookies: Chocolate pudding and cocoa powder to icing.
- Coconut cookies: Coconut custard pudding and coconut flavoring to icing.
- Orange cookies: Orange Jell-O to cookies and orange juice to icing.
