Semi homemade: Chocolate mocha and raspberry truffle brownies




Chocolate and berries, what a terrific combination! Several years ago, I went to a craft fair of some sort and picked up a package of brownies that resembled these. So, the baker that I am, came up with a recipe of my own!

Chocolate Mocha & Raspberry Truffle Brownies

  • 1 box of brownie mix
  • 1 12 ounce bag of chocolate chips
  • 1/4 cup powdered sugar
  • 2 teaspoons instant coffee*
  • 1 8 ounce package of cream cheese
  • 1/3 cup raspberry jam


Make your brownies as directed on the box or bag.
Add 1 Teaspoon of instant coffee to the mixture.
Bake brownies and let them cool.

Mix cream cheese in a mixer until fluffy.
Add sugar and jam to the cheese and mix until well blended.
Melt chips in microwave until melted. Stir frequently to prevent burning. This should not take longer than 1-2 minutes. Check at 30 second intervals.
Add remaining 1 teaspoon of coffee to this mixture. Mix.
Fold chocolate mixture into cheese mixture.
Spread over cooled brownies and chill for a minimum of 1 hour.
Cut and serve.

* If you would like a more intense coffee flavor, add 2 teaspoons of instant coffee to the mix and 2 teaspoons to the icing.
